Chicken Jambalaya on the Campfire
It takes a little prep and some time to make but it is delicious! We bring our big stockpot and put it over some HOT coals on the grate. Put a little oil in to coat the bottom of the pan. When the oil is crackling, throw in some chopped up onions and bell peppers and let those carmelize for awhile in the pan, stirring them occasionally so the bottom doesn't burn. When those are carmelized, throw in some spicy sausage chopped up and cook that down untill its browned. Also throw in some fresh garlic, fresh thyme, salt, pepper and ceyanne pepper (to preffered heat). Once the sausage is browned, throw in raw cut up chicken (thigh meat works well) and cook that down stirring all the ingredients together. Once the chicken is lightly cooked, deglaze the pot with a little beer or white wine and then you add the rice. Measure the rice just like you normally would (2-1). Stir the rice in with all the other ingredients for about 1 or 2 minutes and then add the water. Stir with the water added and bring to a boil. Place a lid over the pot and wait about 25-30 minutes and you will have a delicious rice dish that is also good in the morning with eggs and tortillas.
