Campfire Pineapple
Upside-Down Cake

Servings: 8-10
Prep Time: 15 minutes

Ingredients:
Crushed pineapple undrained
Brown sugar
Butter or margarine
Optional Marchino cherries
Round individual shortcakes (like those used with strawberries)

Directions:
1.) Tear off a piece big enough to make a tent over your piece of shortcake.
2.) Place your individual shortcake indented side up on the foil.
3.) Place a spoonful of pineapple on top the shortcake with a bit of butter or margarine.
4.) Top with a heap of brown sugar.
5.) Place cherry on top. (you can't really go wrong with whatever amounts you use).
6.) Fold the foil over the cake and fixings to make a tent.
7.) Place the tent on hot coal.
8.) Depending on the heat of the coals 15-30 min is about all that is needed.

We just eat ours right out of the foil and yummy. Some of our group like them so well they fix them at home in the oven when they want an evening snack.
